Building an Amish barn is a testament to brotherly love and community spirit. Like any great project, it doesn’t happen overnight. The family that needs a new barn must first prepare and lay the foundation for the barn. They also need to plan for and purchase the thousands of feet of lumber, nails, and other building materials needed to build such a large structure. Once these tasks are complete, the owner will approach the Amish elders for help with the elevation of the barn. If the elders feel the project is worthy, they will grant permission for the barn to be built.

A date will be set and families in the surrounding community will be notified. Men ages 16 and up will participate in the actual construction of the exterior of the barn. A man, usually an older man with years of experience, will serve as the construction foreman and direct the work. He will assign specific tasks to the men to make sure the project is done safely and efficiently. The younger boys usually don’t help with the actual construction, but they will bring tools, wood, and nails for the men who do the work. Eventually, as the youth mature, they will be given more and more responsibility until they, too, are part of the build team.

Women and girls are equally busy, preparing meals, looking after young children, cleaning up after dinner, and running errands as needed. Usually the building structure is completed in the morning. After the midday meal the roof is built. The raising of a barn usually begins at dawn and is completed by dusk.

As you can imagine, preparing large quantities of food for so many people can be daunting. Most of the families that help with the construction of the barn will provide a plate, but it is up to the owner to provide the rest of the food and drinks. Just like with real barn planning, a lot of preparation goes into planning, preparing, or buying the ingredients to feed the hungry workers a satisfying meal. In keeping with the barn building theme, here’s a recipe for an Amish Haystack that feeds twelve people, but can be doubled, tripled, or whatever quantity is needed.

Ingredients:

2 pounds of lean ground beef

One 1/4-ounce package of taco seasoning mix

One 14-ounce jar of organic pasta sauce

2 cups of crushed crackers

One nine-ounce bag tortilla chips, crushed

2 cups of hot cooked rice

1 head iceberg lettuce, thinly sliced

2 cups tomatoes, diced

1 cup of chopped carrots

1 cup of chopped onions

1 cup sliced ​​pitted ripe olives

1 cup of chopped green bell pepper

1 cup chopped celery

1 1/2 cups shredded Cheddar cheese

1 cup of cooked bacon crumbled

1 cup of sunflower seeds

One 11-ounce jar of organic salsa

ADDRESSES:

1. In 12-inch skillet, brown ground beef with taco seasoning over medium-high heat. Add pasta sauce; heat to boiling. Reduce heat to low; simmer, uncovered, until most of the liquid evaporates.

2. Combine crushed crackers and tortilla chips in a bowl. Place ground beef mixture, rice, and remaining ingredients in individual bowls.

3. Food is served buffet style and guests prepare their own dish. Instruct them to layer the plate as follows: lettuce, crushed cookie and chip mix, meat, rice. The rest of the toppings can be added to taste.

Here’s another hearty Amish recipe that feeds a crowd or two.

Ingredients:

4 pounds roast beef, cubed

4-6 tablespoons of butter or oil

2 large onions, chopped

1 large can of stewed tomatoes

8 carrots, peeled and cut into large chunks

6 large potatoes, peeled and cut into 1-inch pieces

½ cup fresh or frozen peas

2 bay leaves

Salt and pepper to taste

Beef bouillon cubes, dissolved in water.

Use a large, heavy pot to melt butter or oil over medium-high heat. Brown the meat until it is almost cooked. Add onion and sauté until translucent. Add bay leaves and salt and pepper along with the tomatoes and greens. Cover and cook over medium heat, stirring occasionally. This will need to cook for about 4 hours. Check back frequently. Add beef stock broth to stew as needed if stew becomes too thick. Remove bay leaves before serving.

This stew can also be made into a meatball dish by adding about 1-2 cups of water to the pot and bringing the stew to a boil. Stir, cover and reduce heat. Drop tablespoons of cookie mix into casserole and cover until cookies are cooked.
